Avocado Egg

Ingredients

  1. Preheat oven to 400 degrees Fahrenheit
  2. Cut avocado lengthwise down the middle, cutting around core
  3. Remove core- you should now have two halves of the avocado
  4. Crack egg and put into avocado hole, making sure not to break the yolk
  5. Season with salt and pepper (You can always add more toppings if you’d like- sometimes I’ll put sprinkle some chopped spinach, or shredded cheese for a bit more flavor 🙂
  6. Bake in oven at 400 degrees Fahrenheit for 15 minutes, or until egg is cooked through. (If you would like the egg a bit runny then you can take it out a bit sooner)

*As I stated above you can customize this with whatever toppings you’d like. I kept it simple but the possibilities are endless 😀
